The most obvious thing that happens to the egg yolk because of the hen's diet, is that if she is on a wheat or white corn diet, her yolks will be light yellow. This coloration is preferred in the Midwest. In the South, where they light their yolks dark and orangy, the hens are fed diets high in carotenoids such as leafy green plants, marigold petals, tomatoes and red peppers.

Otherwise the yolk's nutritional content will stay approximately the same as long as the hen is getting an adequate diet. There is a problem in chicks when the hen does not have adequate Vitamin E, but it is not significant enough to affect humans.
