It depends on how the word "differ" is meant.
If the question is asking why the writing style varies, it is important to note that the Old Testament was written over the course of several hundred years if not an entire millenium. In that time many different people with many different writing styles wrote different parts of the book. Some writers prefer to write in an uplifting style, some in a downtrodden style, some like to use "future tense" and others like to use "past tense" and so on.
If the question is asking about the shift from Hebrew to Aramaic in the later books, then this derives primarily from the fact that after the Babylonians conquered Judah, Aramaic became the lingua franca instead of Hebrew. Therefore, it became easier to record texts in Aramaic. Under Macedonian and Syrian Greek occupation, Koine Greek became the dominant language and many Deuterocanon books are written by Israelites in Koine Greek.
