The price of the olive oil is varied somewhat by how many processes are used to refine and extract the oil, and somewhat by the quality of olives (the best are scarcer, hence more expensive) required to process it. There is a very good reason why good quality "EVOO" (as Rachael Ray calls it)* costs more than plain "utility" olive oil.

* EVOO= Extra Virgin Olive Oil.
