It started back in 1891 in San Francisco a local commander was going to give a Christmas dinner for around 1,000 people but did not have funds to be able to tackle such an expensive event.

So he was reminded of a time back in Liverpool England where a large kettle was placed near the landing docs of ships named a "Simpson pot" to collect money for the poor. He adopted this idea and put a pot at the Oakland Ferry landing. He placed a sign with it that read "Keep the pot boiling" and soon had the money needed to fund this dinner.

Six years later this story had made it's way across the country and was eventually adopted by The Salvation Army worldwide.

I'm not sure as to why the kettles used nowadays is red but my assumption would be because it's just the color used for the shield that everyone is familiar with. And that became a part of the organization back in 1901.
