Why does your Chevrolet Cavalier start but click rapidly for about 10 seconds before a service engine light comes on the car runs great after that but the light stays on until you restart the car?

Borrow, rent or buy an automotive code scanner and see what it says. Most likely you'll be getting something like a low voltage warning, but when the light comes on like that it's telling you that there's a problem. When the light goes out the computer thinks the problem is solved.
I'd suspect the battery but I'd also connect the code scanner before I replace anything.
