Probably what is happening is the leaves or foliage is getting into the water and they are very acidic. The other thing would be if you are still using tablets and chlorine is going up this will also decrease the level.
If people are using it, the action of them getting out with water can gradually bring down the level of water, as can splashing. These are human factors. Also, natural factors like evaporation and a leak in the pool will take the water level down.
This depends on a number of variables. If you have a vinyl liner, you may have a hole somewhere that water is leaking out of. There are ways to find this out. Most specialty pool stores have a dye solution that you can put into your pool and the dye will be drawn to where the water is leaking out. This will not hurt your water.
Also, if it is extremely hot, your water may just be evaporating quickly. This happens during especially hot summers. Instead of letting it get low quickly, I recommend testing for the hole with the dye method, and if that isn't it just run your water hose a few minutes a night to replace what may have evaporated during the day.

If you have a deck level pool or spa (water level with the top of the pool, that usually overflows into a grating around the pool) when people get into the pool their body displaces water, this water is stored in the Balance tank until the people get out and the water is pumped out of the balance tank and back into the pool. A skimmer pool that has a lower water level than the top of the pool does not need a balance tank as the displacement is handled by the water level rising. Deck level pools and spas are considered more aesthetically pleasing.

Check to see if there is a leak in it. You can do this by taking the cover of the pool and marking the water level, then take a bucket of water mark the level on it. place the bucket next to the pool and leave it there for a few days. if the level in the pool drops the same as the level in the bucket then the reduction of water is the result of evaporation. however if the level in the pool drops more then the level in the bucket you are loosing water somewhere.

You would want to bring it up higher. You would normally drop your water level to just a few inches below the skimmer. The water in the pool provides some stability to the walls.
