When the air conditioner comes on, which includes turning on the defroster at low temeprature ranges, it draws a lot of power from the engine. This can result in a decrease in idle speed and less available power on starting off from a start. This is often felt as a shaking or jerking. It is possible that the idle is low or that there are problems preventing full power.
If you have the defroster in the on position the ac will do that.

Because it's not a defroster button! It's just the symbol for ventilating the air into the car. It shoudln't be called a defroster since defrosting is meant by heating up the coils that you see at the back of the car. I'm pretty no car has wires in the front!

The AC compressor puts quite a load on the engine, especially one with less cylinders. It puts a load on the engine, causing it to jerk back and forth.
the defroster is actually your a/c. it doesn't run much when it's cold outside but it works with your heater to remove the moisture from inside the car. blowing warm dry air on the windshield. just like it removes the moisture (humidity) from inside the car in the summer. the difference is the temp. you have it on. even if the a/c don't work, the heater will still do the job, just not quite as well.
If the defroster is blowing hot air and it is still leaving moisture on the inside of the windshield, the heater core may be leaking coolant causing that condition. If the defroster is blowing cold air it could be the cooling system is low on coolant, or the thermostat is stuck open or the heater core is plugged up or the temp blend door has a malfunction.
the air conditioner shouldn't have anything to do with it. there could be a problem with your tires or your driving or your kid could be jumping on the seat
