The enzymes required to break down fat and lipids (fats) in our diet are found in the stomach/intestines. It would not be efficient to absorb the nutrients from our food that far away from the stomach/intestines.
The chewing bit (mechanical preparation for digestion) does, but there are no ensymes in the mouth/saliva that can break down protein, only enzymes for starches/sugars. Thus meat/protean has to wait until it is further along the digestive tract before it starts to be chemically broken down.

This is a very long molecule that takes a long time to break down. Therefore, in the herb/omnivore's saliva is an enzyme called amylase. This starts to break down starch molecules in plant matter in the mouth. On the other hand, carnivores eat meat- predominantly proteins. Protein will be digested in the stomach and small intestine once the stomach acid and protease enzymes break down there molecules. As meat doesn't contain starch, starting digestion in the mouth would be pointless.
