This depends on what type of moped it is. If it is a larger sit down scooter/moped, they use a type of transmission called a continuously variable transmission or CVT. Even Though it seems like there is only 1 gear/no shifting, the transmission automatically adjusts the gear ratio buy squeezing 2 plates together and apart and sliding a belt up and down on each end to change the ratio judged buy the engines RPM. It does this so smoothly that is seems as if there is no shifting, and the acceleration may seem slower because there is no jolt like you are used to. But these transmissions are far more efficient than a normal gearbox because they keep the engine at the RPM where it has its highest level of torque, resulting in better fuel economy and acceleration.
Or, if it is a cheaper Chinese built moped/motorized bicycle/scooter, then they have no gear box because it is much simpler and cheaper for them to build. But this will result in slow acceleration, low top end and no hill climbing power and low engine life. But they have no real reason why not to put a small simple gear box.
