Several reasons:

  • It sort of makes sense that you can't get something out of nothing. Expecting to get energy out of nothing is like pouring one liter of water into a jar, and expecting to get two liters out of it.
  • It agrees with observation. So far, no exception has been found.
  • It follows from Noether's Theorem. According to this theorem, the Law of Conservation of Energy is directly related to the fact that the laws of nature don't change over time. (Don't ask me for the details - this is some advanced math.) The fact that the laws of nature are the same today as they were yesterday agrees both with common sense, and with observations.
  • Violating the Law of Conservation of Energy would conflict with several other laws that are equally well-accepted; for example, with the Law of Conservation of Momentum, and the Law of Conservation of Mass.
