When the volcano erupted it left a thick layer of ash over it. It is useful to historians because the ash preserved everything. Everything they wore and did, architecture and everything can be seen when you look at Pompeii.
There are many reasons. One must be the fact that the city was preserved very nearly exactly as it was at the time of the volcanic eruption that buried it. Another is that there are still parts of Pompeii and Herculenium that are still not excavated since the eruption.
