Mr. Albert Baumann found a cutter with beautiful engravings. He chose this one to make a biscuit that he named Tennis Biscuit. He then registered the name â??Tennisâ?? and the design as well. Tennis Biscuits are South Africa's favorite biscuit. They contain coconut and are a crisp semi sweet biscuit. They have become a staple in the South African pantry. These are used in making crumb crusts, fridge cakes and other desserts.
