This may be the phenomenon of drug mixing. By this phenomena amoxicillin is mixed with clavulinic acid and the longetivity or the intensity of drug action is increased in that particular area. This increases the action of drug uptil 8 hrs approx. So 8×3=24 hence 3 doses are required daily. But note that the half life remains constant.
You can safely take 500 mg amoxicillin every four hours without any additional side effects or advantages.

Adult dosages of 325mg to 1000mg three or four times a day are not too uncommon, with a maximum daily dose set at 8g. Note that the max daily dose may be problematical if taken chronically. Doses for cardiac care are traditionally lots lower. Also, "quick acting aspirin" (it dissolves in the mouth) is dosed differently.
Amoxicillin is used to treat mild to moderate skin and skin structure infections. It can be given 250mg q 8 hours or 500mg q 12 hours. For severe skin infections, it can be given 875mg q 12 hours or 500mg q 8 hours. One gram is not normally taken all at once but perhaps you didn't mean that. You have not stated a dosing schedule.
