The big C is used at the start of a sentence. The small c is used in the middle. There is no difference
A calorie with a small c is the amount of heat energy that is required to raise the temperature of 1 gram of pure water from 14 to 15 C.
A Calorie with a capital C, or kilocalorie is the amount of heat it takes to raise the temperature of a lire of water by one degree centigrade
