Probably because the stuff they grind up to make cinnamon powder isn't completely high quality bark. There may be some lesser twigs and even leaves ground in there.
Yes
The amount of powdered cinnamon you get from a cinnamon stick is a little more than the stick itself. As cinnamon is ground, it's dry properties cause it to absorb moisture out of the air, and that causes the appearance of more ground cinnamon. You will usually get about one teaspoon of ground cinnamon from a cinnamon stick.
From gourmetsleuth web site 1 stick of true cinnamon = 1/2 teaspoon ground cinnamon = 1/8th teaspoon cinnamon extract From the Cook's Thesaurus One part flavoring oil is roughly equivalent to four parts extract, but this may vary according to the products used. To be safe, begin by substituting 1/8 teaspoon of oil per teaspoon of extract, then add more drops of oil until you're satisfied with the flavor. So 1 tsp of cinnamon extract = 1/8 tsp of cinnamon oil = 4 tsp ground cinnamon = 8 sticks of true cinnamon

Cinnamon is the bark of a tree. The most common cinnamon sold in North America is from the Cassia, it is generally sweeter and more aromatic than true cinnamon but has an astringent edge. True Cinnamon (Ceylon) is from Sri Lanka and is the bark of an evergreen tree related to the bay laurel. It has a thinner bark and more delicate flavour than the cassia cinnamon.

As i said to another quests btw you spelled cinnamon wrong Yes you can actually. Especially people with asthma because of their small airways. The reason is because when you do the challenge you breathe in the cinnamon because its a powder so then it goes into your lungs. It then sticks to you airways and if you have asthma then you have smaller airways and it happens quicker. On the first time you probably will just throw up or something i coughed a ton for like 10 minutes after words. But the more you do it the more cinnamon gets stuck to your airways and then you eventually can't breathe. BTW I PASSED IT
