In Hinduism, coconut is considered as a symbol of purity, knowledge but not lucky. Coconut has a tough outer layer and a soft inner layer. The outer layer is a symbol of our ignorance and inner layer is a symbol of our knowledge. Hindus break it in front of god to symbolize that they are breaking their ignorance in front of god. By doing so, they get the inner layer, the knowledge and pure coconut water inside. This pure water is 'holy'.

We all know that this water is really purer than anything else. They drink it as a symbol of god's knowledge.
