Agriculture in general is an important part of the economy of North Carolina. If there's a preference for corn, it most likely has to do with the fact that the federal government deliberately subsidizes an excessive output of corn crops.. while it's good for the farmers who grow it, it's detrimental in a lot of ways. It's the reason corn syrup is so commonly found in food products, and it's contributed to the wave of illegal Immigration, when US-government subsidized corn was shipped across the border and made available at a cheaper cost than what the locally grown corn cost, thus putting many farmers in Mexico, Central America, and South America out of business.
