What can go rancid or bad in it? It contains the fatty germ of the kernel, which will eventually go rancid unless used quickly or wrapped and frozen. Mold can grow in any grain because it's impossible to remove all liquid from the grain when milling.
Basically oils can go rancid & mold can grow in the flour, not to mention the possibility of "bugs" (often referred to as mealie bugs) getting into the mix.
