It's not. If your mother is telling you to eat the crust because it's "good for you" ... well, it's not bad for you, and not eating it is wasting food, but it's not as if you'll curl up and die if you don't eat it because it contains nutrients you can't get in any other way.

A couple of studies have found that the crust is richer in fiber and antioxidants than the bread itself, but if the only fiber and antioxidants you're getting come from bread crust you're either eating way too much bread crust or not nearly enough fiber and antioxidants.
