This is due to the fact that when imaging your gallblader and sphincter of odi, you would like it free of bile. When eating certain types of food the body will produce and store more bile depending on the fat content of the ingested food. Since we are gauging and testing these two anatomical structures you do not want an over-active gallbladder releasing excessive bile into the duodeum.
