Food hygiene was very important in making sushi. Raw ingredients had to be prepared fresh, so gloves and other hygienic supplies were needed.

The terms "Itamae" and "Shokunin" are used as a title for the chef. "Itamae" refers to a skilled sushi chef, while Shokunin means simply someone skilled at a profession.
Every country has national symbols that are interesting and have important meanings, pertaining to the country. Japan's national dish is Sushi because it is part of its usual cuisine.

In Spanish Sushi is actually just Sushi.
Maki sushi or makizushi is rolled into a tube and then cut into circles. This is the most common sushi you see. Hand roll sushi or temaki is a whole piece of seaweed wrapped around the ingredients in the shape of a cone. These are left as is and are not cut into smaller pieces like the maki sushi it.
