An experiment has to be undertaken in a controlled manner, recorded in detail, and must be able to be replicated over and over again to prove it works and is correct. Using laboratory apparatus allows such tight control and keeps any experiment free from contamination that could destroy or give false results. It also means that any laboratory in the world would have the same kind/type of apparatus to hand and could then verify or disprove an experiment's published results.
