What happens when you eat rhubarb leaves?

Rhubarb leaves contain oxalic acid. So too does the stem itself. Tomatoes also contain oxalic acid, especially the leaves. Oxalic acid is a poison. Oxalic acid is also found in potatoes and in peppers as well as in peas. Oxalic acid becomes concentrated in tomato paste. In the tomato, red tomato's have less oxalic acid than do green tomato's.

What plant is part food and part poison?

Why do people eat the stalk and not the leaf of a rhubarb?

People avoid eating the leaves of rhubarb because they contain relatively high levels of oxalate (oxalic acid), which at this concentration can be poisonous. The stalk contains less oxalate, and is considered safe to eat.Rhubarb also contains another poison: a group of compounds known as glycosides. However, within the leaf stalk these poisons are confined to the bottom of the stalk, and the middle of the stalk is considered safe.

Is it possible to feed an ant rhubarb leaves and get it to become tolerant to the toxin and when something eats it it will get the poison?

It does seem plausible. Just like the H1N1 vaccine, it would be subjecting the ant to very small amounts of the poison, to raise its immune system against it. You would have to steadily increase its dosages of the Ruhbarb leaves. The only difficulties would be getting the ant to eat the leaf, and deciding how much of the leaf to put in, without killing the ant. But I doubt it will work, because the ant would not have enough poison in it to killing anything larger than a medium-sized spider.
