Matzo is either round or square because a long time ago, when Jews were slaves in Egypt, the Pharaoh told them that they could leave, but they must leave quickly because he might change his mind soon. The Jews only took what they could carry, and did not have time to let their bread rise, so it stayed flat, (or square) and became matzo. We eat matzo now as a tradition, and if it wasn't flat or square and would rise, it would be the same as any other bread.

Matzoh was always round until the Manaschewitz company automated the process and started producing square shaped matzoh. It was round because that's the shape it would go into when rolled out.
