The main reason oil comes out of the top of an engine is pressure being built up in the crank case. This is because of bad rings that don't keep the compression inside the cylinder where it belongs. Try doing a compression check on each cylinder and you will find which cylinder is causing your problem. If you remove the oil filler cap and you have a lot of pressure and oil spray you can bet this is your problem.
Does the knock sound like it is coming from the bottom of the engine or is it more of a tick from the top? How quick do you lose oil?
When standing at the back of the car looking at the engine, the oil pressure switch is located on the left of the engine case at the top and near the rear of the car, not far from the distributor. It should be easy to locate because it should have a wire coming out of it.
Yes you use engine oil in all cars regardless of transmission.
While the car is parked, the oil in the engine will drain into the oil pan. When the car is started, it is the oil pump's job to feed oil throughout the system. What you describe may be the tappets knocking for lack of oil at startup (word of caution: DO NOT rev the engine). You might want to change the oil and oil filter to see if that will stop the problem, otherwise the oil pump may need replacement.
It should written in your car manual which comes with each car or on the top of oil cap.

Under the engine and on top of the oil pan? Well, it could be a oil pan gasket. Check 'er out.
if this sound is coming from the "top" of the engine it may be cause by the lifters. the easy way to get rid of this with out mechanical help would be getting a thicker oil. and also there is a liquid , "engine lucas" which it helps your oil lubricate your engine components better. try that.
