Pigs are just one of countless animals that are considered to not be fit for eating. The actual rule for mammals is that they have to both chew their cud and have split hooves.
It is a matter of debate, but in general, yes, for two reasons:1. Jewish people may break almost any law in order to save a life (except for murder, adultery, and idol worship).2. Even more importantly: in non-life threatening situations, many authorities would still allow pig organs, because technically pig meat is unkosher only if it's dead. If it's a living organ, that's a different story. (If you count living pig organs as unkosher, you'd also have to count living human organs as unkosher).
