sublimation is conversion from solid to gas directly (without generally being able to isolate the liquid). this will generally happen when the melting point of the solid and the boiling point of its liquid form is very close to each other.

In the case of NaCl, the melting point and the boiling point are not very close and hence NaCl does not sublime.
