The casks used to age the whiskey -
- European oak - Fruitcake, chocolate, honey, sulphur, tannins
- American oak - Vanila, grassiness, oakiness, toffee
65% of the flavor of whiskey comes from the wooden casks.
American Bourbon whiskey is constrained to using only brand new charred American oak barrels. So the amount of flavor variation between brands is not so aparent as with Scotch.
That's why Scotch is so varied and wonderful!
