Yes,because they are very little and they may think you are trying to hurt you.But if you have had them for a long time they might remember you and they will not be scared any more.

Sure
a hamster that doesnt get bothered. just dont touch it at all and u should be fine :)
No, unless the "big hamster" is the baby's mother. However if you touch the baby hamsters the mother sense your smell and the mother could eat or kill it because of the smell. So don't touch the baby hamsters.
they got sexually excited.
You can touch them as much as you like when they are AT LEAST three weeks old.
Its not advised to touch a new born baby hamster as the mother can be very protective.
you should ask your local vet about that...
you don't touch the hamster.. just let the mom do the work and they will be fine... just make sure that the mother had plenty of water and dry food
You take them out when they are covered in fur or at 4 weeks . Then you can touch them and separate them by gender
sometimes but not always: if you have had the mother hamster for some time now she will prioberbly notice your sent and not bother. sometimes she can neglect her babies if people touch them. when my hamster gave birth 1 of her babies fell out the cage and i picked it back up without putting anything on my hand and she didnt eat nore neglect the baby
