Why is your praying mantis not moving except for when you pick it up?

It means that it could be resting. Praying mantis move when they feel like moving. If they don't then their fine, pick it up once to see, but after that, leave it alone.

AND IT DID HURT! some farmers have even recorded the same "explosion" type experience within grazing cattle. the cow would incidentally partake a mantis while grazing in a pasture and the mantis would "explode" in their little "freaking out" ball of fury and leave painful and potentially bacterial starting spikes in the cows mouth.

Yes, you can. Their bite is strong enough to cut through human flesh, however, they're not known to bite humans. Make sure you grab them by the muscular plate below their head and not their abdomen though - their abdomen is very sensitive and they can potentially become frightened and grab you with their spiny claws if you do so.
