Holland, i.e. the Netherlands, was one of the founding members of the EU. It's probably Israel in answer to the question. The competition is a European one, not just EU, so there are many countries in Europe outside the EU that compete, like Belarus, Serbia and Switzerland. The three countries that compete that are not in Europe are Israel, Azerbaijan and Georgia. The two that compete that are only partly in Europe are Turkey and Russia.
First of all, Israel has never been a member of the EU. As for the UN, there is no precedent for "kicking a country out of the UN", and even if there were, it's far from clear or certain whether there is anything illegal about the settlement construction.

For financial and political stability; Cyprus is a small country - the population is less than some English counties - and it has unstable neighbours; Turkey, Israel and Syria. Cyprus was invaded relatively recently (1973) and, understandably, Cypriots welcome the stability that being a member of the EU tends to bring. Cyprus has also benefited from EU grants for major road projects.
Currently, all countries accept EU passports. However, if you have a stamp from a country B that has bad relations with country C, or vise versa, the country C or B may deny you entry. Example, if you enter Israel, then you cannot enter Iran or some other Arab nations using that passport. Also, if you enter Iran or those Arab nations, you may be denied entry when you go to Israel.
