Because there is no market for it. It would cost more to make it than the product is worth, so a company would lose money by making it. No company wants to lose money, so we don't see pickle ice cream.

I have heard (although I have no proof) that Swensen's Ice Cream Factory, does, or at least did, make dill-pickle flavored ice cream.
