Mexico the country is an independent nation since 1821. In 1846 there was a war between the United States and such country. Mexico lost, and almost half its territory became part of the United States; those territories are present-day California, Nevada, Utah, Arizona, New Mexico and Texas, as well as parts of Wyoming, Colorado, Oklahoma and Kansas.
The US was not interested in acquiring all of Mexico, as it would mean to grant citizenship to several million of Mexicans. This of course, happened due to racism.
After the Mexican-American War (1846-1848), Manifest Destiny supporters and slave owners were divided as to what to do with Mexico. Some proponents argued in favor of annexing all of Mexico (they were known as the "All Mexico Movement"); however the vast majority were against, due to the fact that by annexing Mexico, the United States would have had to grant US citizenship to millions of Mexicans. This was badly seen, due to racist reasons. Senator John Calhoun of South Carolina made these views clear in a speech to Congress on January 4, 1848:
