It's simple, certain animals play certain roles in ecosystems around the world. Without those animal species, the ecosystem will collapse. Although new animals will evolve and will fill in the roles that extinct animals left behind.
For the ecosystem to survive as it has been, there must be a balance of organisisms. If an organism becomes extinct, then a certain part of its ecosystem has been taken away and unbalanced. When habitats are unbalanced, then other organisms struggle and major changes occur. These changes will end up affecting humans and environments.
Because all organisms depend on each other. Let's say that bees became extinct (BTW, their population is decreasing significantly because of disease). Nearly all flowering plants depend on bees to pollinate them so that they can reproduce (which are everything except mosses, conifers, ferns, and a few other rare plants). That means that all of those plants would die, and then any animals that ate those plants would die. Any animals that ate them would also die. This would cause a HUGE mass extinction (and humans probably wouldn't survive).
Obviously, this is an extreme case. However, every animal and plant in the world holds a niche that other organisms depend or even completely rely on. If one organism goes extinct, then individuals of other species suffer or even die, and some species may even become extinct. This effects every level of an ecosystem.
