During turbulence the plane could lose a lot of altitude and may cause the plane to nose dive and the turbulence can be very powerful that it can violently shake the plane,the seat belt keeps the passenger in their seat.Think of it like when you drive,sometimes you break really hard and the seat belt stops you from hitting your head on the dashboard. In case of an explosive decompression causing a part of plane to come off,the seat belt keeps you from flying out of the plane.This is an unlikely situation and i don't want to scare you off from flying,but it is definitely a recommendation to keep the seat belt on. During landing,taxiing and taking off,you must keep the seat belt on. With taking off,the plane could overrun the runway and the landing could be rough and might be bumpy or the plane could overshoot the runway, thus the seat belt keeps you in place.Taxiing is where usually people decide to get up and get their bags,if a flight attendant yells at you to sit,it is normal to get a reaction like that.
