A engine temp fluctuates in use, from very cold when started in the morning to very hot when under heavy strain, oil acts as a temp regulator. It passes through the engine, preventing parts from heating to a high degree, and warming other areas evenly.

In simple terms oil is the life blood of the engine. It lubricates all moving parts. Without oil the engine would self destruct in short order.
