Carbohydrates keep energy longer than lipids. Carbs, give you energy for the next day, and lipids aren't so good with giving you energy. Lipids can clog up your digestive system, so you must drink plenty of water with them. Carbohydrates are good for storing energy.

Sugar is soluble in water, and would cause the cell to absorb water by osmosis, which might eventually damage the cell. Starch, being insoluble, does not cause problems.
