The hand grips aren't always rubber. They are often a synthetic plasticy material with rubber-like properties. The reason that this material is used, as opposed to, say, metal or wood or hard plastic, is because it has high grip, and is more comfortable on the rider's hands than gripping a hard material.

∙ 9y agoRubber, whether natural or a synthetic alternative, is a poor conductor of heat and a good vibration-absorber. It also has a high coefficient of friction, partly due its soft surface trying to mould itself to your grip but mainly by the moulding having ribs for extra grip.
So it:
... feels warm to the touch because it is minimising the flow of heat from your hands into the heat-conductive metal of the handle-bars,
.... cushions your hands from some of the road-shocks and vibrations, and
.... helps you grip the handlebars (smooth metal) properly

∙ 8y agoHuh??? Most of a bicycle is made of metal (frame, handlebars, wheels, spokes, etc.) only the tires are "rubber" (and this is usually a synthetic rubber polymer made from petroleum not natural rubber).
