You shouldn't because it is impossible to do so. You can never tell the age, sex, breed, size or weight of the "beast" when you order meat because when the hide comes off, they all look the same.

What you should do, though, is specify the species of "beast" you want your meat to come as: Chicken, Turkey, Cow (beef), Pig/Hog (Pork in the form of ham or bacon), Mutton (adult sheep), Lamb (young sheep), Capron (goat), Veal (young cow), Elk, Snake, Bison, Buffalo, Venison (deer), Moose, Caribou/Reindeer, Bear, Cougar/Puma/Mountain Lion, Zebra, Ostrich, Emu, Frog, the list goes on.
