I'm not sure if I understand your question correctly. I dry a LOT of fruits and vegetables, as well as can and freeze. When I dry items, I STORE them in air tight containers. This allows you to keep them longer. If they were out in the open ( in a bowl on the table . . . ? ) insects could get to them, humidity in the air could cause them to spoil, and the sunlight could cause them to fade and lose nutrients. So storing them in air tight containers allows you to keep them longer.

What month is oats ready for harvest?

Oats are harvested when they have turned a golden-brown colour and the seeds are hard when a farmer tries to squeeze the seed in between their fingers. This is when this crop can be harvested for grain (which is collecting the seeds). In North America, oats are usually harvested in the autumn, which is around September into October. Oats harvested as green-feed or silage (chopped and fermented animal feed, stalks, leaves and seeds) are done so around four to six weeks before the crop would usually be harvested for grain. It is stored and fed later to livestock.

How do you determine the maturity of crops ready for harvesting?

All types of crops should be a yellow-gold colour when about to harvest and all should have seeds that are in a hardened stage. Cereal crops are harvested when the seeds on the seed heads are hard (in other words, you can't really chew them). Oilseed crops (like mustard and canola) are swathed a few weeks before harvesting so that they cure. Lentils and legumes are harvested when the seed pods are hard and shriveled and the seeds inside are hard as well.
