so that it cannot make any nutrients/energy from photosynthesis (because there is no light), therefore all its nutrients are used up before the experiment begins....so it is a reliable test (nutrients made by photosynthesis before experiment would cause unreliable results because it wouldn't give proof that light is needed for photosynthesis to occur)

I am guessing so that it uses the starch that it has so that when the starch test (experiment) is carried out later, you can be sure that the starch is being made currently.

Why is it so important to control variables in an experiment?

You need to control variables in an experiment so as to make sure that only the variable you are testing and changing is the one affecting the results of your experiment. For example, in an experiment to find the effect of light intensity on the rate of photosynthesis of plant, you'll change light by putting a plant in sun and another in dark but you must not change carbon dioxide level for both plants so by that you have controlled other variables in the experiment(variables which must be the same always in the experiment).

For instance, if you wanted to experiment on plant a, plant b, and plant c. You would put plant c to one side, treat it like a normal plant (water, feed, etc.) and call that the control. You could then experiment on plant a and plant b - feeding them differing fertilisers, allowing pests to attack the plants, and so on. At the end of the experiment, you could compare the growth of plant a and plant b to the control plant c.
