When we soak seeds for overnight, it makes them soft and after cooking it will be good to eat, or it will hurt your teeth very badly.
The seeds need nutrients for their growth during development inside the fruit and on ripening & drying they need water for sprouting and germination.
Concrete is corroded by salted water.
They eventually release the water that they've soaked up back into the air.
Mongo seeds are not separated by filtration. They are soaked in water for a few hours to allow the seeds to swell. They are then removed from the water and placed in a container so they can germinate.

Germination dry pea seeds if they are soaked into water for few 24 hours are taken out and excess water is removed & that the seeds are kept covered with a wet cloth and wait for 2 to 3 days. The peas start germinating in this way but If the seeds are kept continuously under water the seeds will fail to respire and die. I hope that i have answered your question :-)
Mongo seeds grow best in water without cotton. For effective germination of mongo seeds, leave the seeds suspended in water for between 8-12 hours. After this period, remove the seeds and new growth should take place within 24 hours.

Salvia hispanica, aka Chia, is a plant in the Sage family. The seeds are edible and used as a nutritional supplement or "health food". The seeds are soaked in water, which causes them to produce a slimy mucus which makes them easy to swallow.
of course. controled soaking and drying is used to create primed seeds. the water starts the germination process. of course the root will soon need oxygen so if you keep it soaked it will suffacte and die.
It will increase due to osmosis
