Because when Saphira knew that the Ra'zac were near she went into a frenzy of anger and, in an attempt to protect Eragon from them, took him far away so he could not rush to the farm and potentially be killed.
Later she expresses regret for the fact that Garrow had to die, but not for her actions, because she was trying to protect her rider.

In the prologue, Arya is captured by the shade Durza. In the following chapter Eragon finds a mysterious stone when out hunting and takes it home to the farm where he lives with his uncle and cousin.
Garrow gets killed by the RA'ZAC when they use the Silthir Oil to burn down Eragon's farm. this happens when saphira takes eragon away from the farm to protect him. if Brom had of used his magic powers to heal him he would of survived. but that's just the way Christopher Paolina wrote the book.
