Because it's very dangerous. the definition for sharpshooting is; one skilled at shooting. rodeos may be crazy but it's also safe. you wouldn't want to see a person OR an animal dying just for your entertainment.

During the early days of the Wild West Shows, there were sharpshooters who wowed audiences with precise shots. Annie Oakley, Calamity Jane and others were celebrities at the time. One of the last, was a Texan called Joe Bowman who was active through the 1960s. A new sport, called Cowboy Mounted Shooting has become popular at rodeos. It combines shooting at balloons while barrel racing.
