The Church didn't change the Apostle's Creed to the Nicene Creed, they are separate Creeds. They are used in different manners.

Never, the Nicene Creed originated in a council ordered by Constantine, long after Christ, to define Orthodox theology. It clarified which sects of Christianity at the time would be supported by the government and which would not.

Some historians believe that the current version of the creed used in mainstream Christianity was an extraction of, or evolution of the old Roman Creed to the Nicene Creed to the Apostles Creed to the current version.

It is a formal declaration of Christian faith as interpreted by men at the time of origin. It extracts primarily from the Gospels and next the letters in the New Testament. There is some, though not much consideration for the Old Testament works. The Nicene version was an attempt to defend orthodoxy from the perceived threat of Arianism in the early-mid 4th Century. The push for the more current version came in the rule of Charlemagne in the early 800 ADs.
