To minimise the effects or inconvenience of having to change the day when you cross it. It would have been far more problematic if the IDL was passing through some country or through land as obviously more people would then be crossing it on a daily basis. By putting it in the middle of the ocean, its only ships & aircraft that cross it.
It isn't in the middle of the ocean, it stands on an island which was originally called Bedloe's Island, but which is now known as Liberty Island.
Those coordinates - would put you literally in the middle of the Pacific ocean !

That would put you somewhere in the middle of the Atlantic Ocean.
Personally, I think that was just a coincidence, and had nothing to do with the International Dateline. My guess is that you took off from Asia or Australia at night, and flew east toward North or South America. At just about the time that every passenger's body was ready to settle into the deep middle-of-the-night sleep, the crew knew that you were just about to meet the sunrise. You were asked to draw the shades so that those who felt like it could continue to sleep comfortably. That's my opinion. I could be wrong.
