There are a lot of different definitions for melodrama historically. A lot of people use the word to describe theatre which is conventional in some way--the characters are conventional, the plot is conventional, or the values are conventional. This is unfair and unhelpful because people tend to view other people's ideas and values as conventional and their own as being realistic and natural. An honest appraisal demonstrates that conventions and conventionalized dramatic tropes go in and out of fashion over fashion, being replaced by other, and not necessarily newer, tropes.
One of the historical definitions of melodrama is dialogue (or monologue) spoken over background music. This would be just about any movie you want to name.
Another is a popular form of drama in the nineteenth century, involving simple characters with simplistic emotional responses to their troubles. Dramas of this type were also popular in the middle ages (mystery and morality plays) and in ancient times (Roman drama). They tend to be popular in cultures which are smug and self-satisfied and want no ambiguity or complexity in their appraisal of a world in which they are obviously the masters.
