Why were Arthur and the other knights looking for the Holy Grail?

In most versions of the legend, the grail appeared to them in a vision (or possibly a miraculous appearance). After it vanished, they decided to seek it out; the reasons for so doing vary. For example, in Le Morte d'Arthur, the grail miraculously produces food and drink for the knights, and Gawaine states that he intends to find it at least partly so that he can get more food and drink. (On a less material note, he also says that he wants to get a better look at it.)

Arthur was the son of Uther and Ygraine - but Ygraine was NOT Uther's wife when Arthur was conceived. Had Uther and Ygraine had other legitimately conceived children, Aurthr would have been .... "inconvenient", and a potential threat to Uther's other sons. For Arthur's own safety, Merlin took the infant Arthur away to be raised separately. One more point; there is only ONE KING AT A TIME. If Uther was King, then Arthur could not be - and Arthur could not be King while Uther lived.

In the story I have heard, Sir Mordred was supposedly Arthur's Son/Nephew. Merlin Prophesied that Arthur's son would kill him. Arthur sent Mordred out with 40 other babies to die afloat in a coracle out in the sea. Mordred was the only survivor, grew up in Lothe, and became a knight of the round table. Only a promised best knight will achieve the most difficult of these adventures. Meanwhile the Knights of the Round Table do achieve many of the lesser adventures and put an end to the oppression they cause. Here first comes that idea that all Arthur's Knights of the Round Table take part in the quest of the grail.After the grail quest is achieved by Galahad, Perceval, and Bors there are no more wonderful adventures.

Generally there are 9 major ones, but in reality we don't know. A total of 32 existed that we know of. But one was King Arthur, 5 were other kings, and one was Mordred (another was also the butler... bet you heard that quote before lol). But also remember there are numerous different legends you can go by (some were Lancelot-Grail, Post-Vulgate, and my favorite, La Morte Arthur).
