Asia had a lot of goods that people wanted, so they needed to figure out a means to get the silk, gunpowder, spices, and other things to Europe to sell. It was all profit driven.
They wanted to trade for the spices, silks, and other exotic merchandice they could find in the Orient.

Europeans during the Middle Ages were only aware of the 3 connected continents they were part of: Europe, Asia, and Africa. they had no knowledge of what is now referred to as the Western Hemisphere, nor of the islands of the Pacific. Voyages of discovery where they encountered the Americas and Australia did not occur until the Renaissance and Antarctica was even later.

Because it wasn't discovered. Turkey is native to the North American continent, which was not yet discovered. The medieval era was generally restricted to Europe, Middle-East and Asia.
