In the Lowell Cotton Mills sit down strikes were not affective because the owners would just threaten to fire all of them and hire new workers, because everyone needed work. In the steel mills, the same thing happened.

Sit down strikes were effective because they disrupted production without damaging equipment, making it costly for employers to ignore workers' demands. Workers' occupation of the workplace prevented replacement workers from being brought in, putting pressure on employers to negotiate. Additionally, the tactic showed workers' unity and determination, strengthening their bargaining position.

Is stock compensation still an attractive bargaining tool for prospective employees?

For really high-priced employees, yes: if you've got a person who has enough money that they can afford to defer the receipt of cash in exchange for the potential of making a LOT of money, stock as part of a total compensation package is a very popular bargaining tool. Large companies (such as Home Depot or Walmart) offer their rank-and-file employees the option to purchase stock at a set price, and that's also a good bargaining tool. This is called an Employee Stock Purchase Plan rather than Incentive Stock Options.
